Ingredients
Instructions
Simmer and shred chicken
Start by placing the chicken in a small pot, cover it with water, and add the carrots, celery, and onion. Bring everything to a boil, then lower the heat and let it simmer gently for about an hour and 15 minutes, until the chicken is tender and starting to fall off the bone. Take the chicken out and let it cool enough to handle, then shred the meat off the bones. Put the bones and skin back into the pot, turn the heat back up, and let the broth boil until it reduces by about half, which should take 10 to 15 minutes.
Simmer and cool filling
Strain out the bones and veggies, then return the broth to the pot and season it with salt and pepper. Add the green beans and bean sprouts, simmering until the beans are tender, around 8 minutes. Stir in the shredded chicken and mix well. Once everything is combined, drain the mixture so it’s fairly dry, then let it cool completely before you start rolling the lumpia—give it at least 15 minutes.
Roll and Seal Wrappers
To assemble, lay a wrapper flat on your work surface and spoon about 1/4 cup of the filling near the bottom. Fold the wrapper over the filling, roll it up once, then tuck in the sides to enclose everything. Keep rolling until you’re close to the top, then brush the edge with a little beaten egg and seal it shut. Repeat this until you’ve used all the filling.
Fry Lumpia Until Crispy
Heat about an inch and a half of vegetable or canola oil in a medium, deep pan to around 350°F. Fry the lumpia in batches, turning them occasionally, until they’re golden and crispy. Drain on paper towels to get rid of excess oil.
Make Dipping Sauce
For the dipping sauce, just mix together soy sauce, vinegar, and minced garlic. Serve it alongside the lumpia and enjoy!

Serving Suggestions
Serve with a side of sweet chili sauce or vinegar with garlic for dipping. It pairs well with steamed rice or as a snack during gatherings. A fresh salad on the side can balance the richness.
Storage Tips
Store uncooked rolls in the fridge, covered with a damp cloth to keep wrappers moist. Cooked lumpia can be kept in an airtight container and reheated in the oven or air fryer for crispiness. Avoid microwaving to prevent sogginess.
